I asked yesterday on Instagram if anyone had a favorite bread and I was surprised by how many people love Zucchini Bread. I grew up in Spain and we cook with a bunch of zucchini but I never had it inside of a bread until I moved here to the United States. Oh my gosh! I was shocked by how moist and good the bread was. It’s amazing what a little zucchini can do!

Chocolate Zucchini Bread

Serves: 2 loaves
Ingredients
  • 2 eggs
  • ½ cup butter
  • ½ cup oil
  • 1¾ cup sugar
  • 1 tbs. vanilla
  • ½ cup milk
  • 2½ cup flour
  • 4 tbs. cocoa
  • 2 tsp. baking soda
  • 1 tsp. salt
  • ½ tsp cinnamon
  • 2 large zucchinis (2 cups grated zucchini)
  • TOPPING:
  • ¾ cup brown sugar
  • chocolate chips
Instructions
  1. Use a cheese grater to grate two cups of zucchini.
  2. In a large bowl combine and mix butter, oil, sugar, eggs, vanilla, and milk until creamy.
  3. Add all dry ingredients and mix together.
  4. Add grated zucchini and combine with the other ingredients.
  5. Pour mixture into two greased bread molds.
  6. Top with brown sugar and chocolate chips.
  7. Bake at 350ºF for 40 to 50 minutes.
  8. Enjoy!
