Today I am so excited to introduce you to my new favorite summer salad – this delicious Tropical Spinach Salad with Sweet Lime Vinaigrette!
I distinctly remember, as a child, when I found out that tomatoes are not actually vegetables, but fruits! WHAT!?
I was suddenly fascinated by this fact….and by the fact that, for my entire life, I had been eating fruit on pizzas, tacos, turkey sandwiches, even salads! Who knew? At the time, of course, I found it both intriguing and a little disturbing (how had I been wrong for so long… and why was I eating fruit on my tacos??) Oh, how things have changed since then.
In other words, I’ve come a long way! Not only am I completely unphased by the fact that tomatoes are a fruit, but I actually LOVE adding fruit to my salads! Especially in summer. I made this salad for myself on a particularly hot day a few weeks ago, and it instantly became my new favorite. The combination of sweet and savory with a tangy lime vinaigrette was exactly what I was needed – light, refreshing, and delicious! And with pecans, fresh-shaved parmesan, and avocado (which, by the way, is also a fruit!) it was surprisingly satisfying. Perfect for lunch or dinner, perfect for summer, perfect for you!
Tropical Spinach Salad
- 3 c. fresh baby spinach
- ⅓ c. strawberries, chopped
- ⅓ c. pineapple, chopped
- ½ avocado, cubed
- 1 slice red onion, quartered ⅛ c.
- ⅛ c. chopped pecans
- fresh-shaved parmesan cheese, to taste
- Layer ingredients in medium salad bowl and top with Sweet Lime Vinaigrette.
- Sweet Lime Vinaigrette
- /8 c. olive oil
- /8 c. vinegar
- Tbsp. lime juice
- Tbsp. agave nectar
- Combine ingredients in a small container with a lid; shake well.

I made this the other night when we had friends over for dinner, it was a huge hit. I will definitely be making this again…the dressing is divine! thanks for sharing. 🙂

Hi, this sounds delicious and I am ready to make it but part of the recipe for the dressing is missing. Could you please repost the quantities of the ingredients for the Vinaigrette?
I was looking at the recipe for the Tropical Spinach Salad. Under the instructions, what is the amount for the olive oil, vinegar, lime juice, and agave nectar? t sounds great and I can hardly wait to make it this weekend.
