Today I am sharing our favorite Chicken Enchiladas Casserole Recipe. If your life is as crazy busy as mine you may always be looking for delicious, quick and easy recipes.
The best part is that you can make these enchiladas with a store bought chicken so in a little over 30 minutes you can have an amazing dish ready to go!
These enchiladas are cheesy, creamy and simply the best!
Chicken Enchiladas Recipe

Ingredients
- 1 Store Bought Roasted Chicken { Costco's chicken recommended } or 4 to 5 Half Chicken Breasts.
- 2 Cups of Red Enchilada Sauce
- 1 Can 10.5 OZ Cream of Mushroom
- 1 Can 4 OZ Diced Green Chiles
- 1 Cup Sour Cream
- ½ tsp. Chili Powder
- 1 tsp. Garlic Powder
- 20 Flour Tortillas
- 2 Cups Cheese
Instructions
- Remove the skin from the chicken and shred the meat.
- Mix in a large bowl all the other ingredients but the cheese and tortillas. DO NOT OVERMIX, the sauce should be thick.
- Add the shredded chicken to the mixture and coat it with the sauce.
- While the oven heats up roll the enchiladas.
- Add some of the mixture to the tortillas, sprinkle with cheese, and roll it. Repeat the process and line them up side by side on the 9×13 baking dish.
- When the first layer is done add some more of the sauce on top of it and cheese on top of that. Then assemble the second and final layer of enchiladas.
- Finish it with the remaining sauce and generously sprinkle some more cheese.
- Bake at 350 F for 30 minutes.
Notes
Optional:You can substitute the roasted chicken for chicken breast.
Remove any fat from the chicken and melt 4 Tb butter in a frying pan.
When the butter is hot add the chicken and let it cook completely.
Shread the chicken and continue with the rest of the steps on the recipe.
