Hello 36th Avenue Readers! It’s Aniko, from Place of My Taste. Looking for some healthy snack ideas these days perhaps? Look no further dear Friends! I brought a healthy, yet yummy snack recipe to share today.We made these amazing Blueberry Oatmeal Bars last weekend, and I can happily say that it will be penciled on to our favorites list.
I hope you all had a wonderful Valentine’s Day last week. Surprisingly, I did not get too much chocolate this year, I rather got some cute drawings from my kids and a lovely date night from my hubby. What about you? Have you had too much chocolate after the loveliest day? Well, it is time for some more sweetness!
This great snack only need a few ingredients, and you most likely have those ingredients in your pantry and refrigerator.
It’s not only healthy and delicious but you can easily throw it together in no time and bake it until you fold your laundry.
- 2 sticks butter { salted }
- 1½ cup all purpose flour
- 1½ cup oats
- 1 cup brown sugar
- 1 tsp. baking powder
- ½ tsp. salt
- Blueberry jam
- Preheat the oven to 350 degrees F.
- Place baking sheet to a 9 x 13" rectangular baking pan.
- Mix together the butter, flour, oats, brown sugar, baking powder and salt.
- Press half the oat mixture into the prepared pan.
- Spread with the blueberry jam.
- Sprinkle the other half of the oat mixture over the top and pat lightly.
- Bake until light brown, 25-30 minutes.
- Let cool completely, and then cut into squares.
I only had blueberry jam at home but substitute it with your favorite jam. I bet strawberry or raspberry would be just as great. The original recipe called for 1 cup sugar, however I only used 1/2 cup, and it was just delicious, not too sweet.
Cut them in squares and send them off to school with your kiddos. What a great and healthy snack it will make.
The top of these oatmeal bars were a bit crumbly but my kids loved them and so did I. Our pan got empty pretty soon and didn’t have much left at the end of the day. If you need to store it for next day, put it into a plastic tapper-wear and cover it.
