Good Morning! I’m so happy to be here with you this morning to share one of our families favorite recipes. Banana Cupcakes with Cream Cheese Frosting are a fancy spin off a cake mix but let me assure you… they’re fabulous!We love banana’s. I have to keep them in stock at our house, just like milk or the kids are asking for them. SO, when I happen to get lucky enough to have a few become over ripened… this recipe is the recipe I make!
- 1 (18.25oz) pkg yellow cake mix
- ½ C brown sugar
- 1 tsp cinnamon
- 1 C water
- 4 oz neufchâtel cream cheese
- 2 Tbsp canola oil
- 3 eggs
- 2 medium overripe bananas, mashed
- cinnamon for dusting
- Cream Cheese Frosting:
- 4 Tbsp butter, softened
- 4 oz neufatchel cream cheese
- 3-4 C powdered sugar
- 1 Tbsp milk
- Preheat oven 350 degrees.
- Line muffin tin pan with paper liners; set aside.
- In large mixing bowl combine cake mix, brown sugar, and cinnamon; mix.
- Add water, cream cheese, oil, and eggs; mix until smooth.
- Add bananas; mix in.
- Divide batter into prepared pan.
- Bake 18-20 minutes or until center springs back with light touch.
- Cool completely before frosting.
- Cream Cheese Frosting:
- In large mixing bowl cream butter and add cream cheese; cream together until smooth.
- Add powdered sugar 1 C at a time; mixing with each addition.
- Add milk to thin if needed.
- Scoop into piping bag using a Wilton 1M star tip to pipe a large star of frosting on the top of each cupcake.
- Garnish with dusting of cinnamon.
- Serve and Enjoy!
