You heard me right!
This is the best banana bread ever!
The first time I had it was right after I had my sweet Anni almost 10 years ago.
A neighbor brought it over as part of a picnic basket for our family and it has been a favorite bread since then.
Everything inside of the basket was delicious but the banana bread was supreme!
The best part about this recipe is that it is simple to follow.
Everyone should give it a try.
Trust me!
Ingredients
4 large bananas { mashed }
1 Cup Butter
2 Eggs
2 Cups of Sugar.
4 Cups of Flour.
1/2 tsp. Salt
1/2 Cup Water.
2 tsp. baking soda.

The first thing you need to do is to peel and mash those ripe bananas.
They don’t look pretty outside but they are sweet and perfect inside.
The reason why you mash them first is because the natural juice of the banana will come out while you get the batter for your bread ready.
This juice will make your bread moist and sweet.
My kids love doing this part…

Cream the butter, sugar and eggs.
TIP: Make sure the butter is room temperature. You want it soft.
If you just took it out of the oven put it in the microwave for about 10 seconds or until soft.
Don’t let it melt you just want it soft.

Add flour and salt to the creamed mixture.
Mix Well!
After you add these two ingredients the mix will turn into soft crumbs.

Dissolve soda in warm water and add to mixture.

Blend in the mashed bananas.
TIP: At this point you can add walnuts if you like.
Bake in a well greased pan at 325º for 1 hour.
This recipe will make two loafs of bread or 1 regular loaf and four small ones.
GLAZE
This is what makes this bread EXTRAORDINARY!
About five minutes before the bread is done add in a small sauce pan
1 and 1/4 Cup Brown Sugar
1/4 Cup Orange Juice
and 1/2 tsp. of almond extract.
With slow heat melt these three ingredients together and stir for a few minutes.
You want the mix to thicken just a little bit.
After your bread is baked and out of the pan add the mix on top of them.
When the glaze cools down it will become harder and almost crystalized.

TIP: If you don’t have orange juice or almond extract, mix brown sugar, water and vanilla.
Still really good!

I cut the recipe in half and am making muffins….they are in the oven now 🙂 I hope they turn out okay…when I added the salt and flour, my mixture didn’t look “crumbly”. It was very doughy.

Oops the last one should have read corn starch, not tapioca starch.
I wanted you to know I tried this recipe Gluten Free using a GF Flour blend of Millet, Sorghum and Tapioca Flours with Potato and Tapioca starches and 3/4 tsp xanthum gum. It is delicious this way too and if you have any celiac readers they can enjoy it too!

Hi Desirée, I am a follower since a few weeks ago and I love this blog, yr blog. The refreshing way you write is nice, I love it, it is just like we were chatting in the phone. Seriously, I am latin (from Panama Rep. of Panama) and I think I have the accent you talked about some posts ago, and I always wonder to know why do that happens. Anyways, I love my roots, my latin style. I am proud of it, exactly like you wrote in your post.
Anyways, I am new to the kitchen affairs, I used to love the kitchen, but from sometime to this point of my life I started to “bla” it (dont like), in this moment I am a “survival” cooker, I a have a daughter and a hubbie, and I have to cook for them (everyday 🙁 ) but still dont feel that connection again (I lost it! 🙁 )
Today (monday 19-03-2012) I am starting my Fave Recipes Box (Imade it myself – a post to come in my blog), And then I found in my inbox this great looking recipe of a banana bread, which I am proud to say I am going to try. Could you believe it! I felt it, again, I want to try a recipe in my kitchen. yipi!!!!!!! Is that a sign from heaven. I am sure it does.
Today I am going to get all my ingredients, and I will let you know how it comes out of the oven. One last questiong 325o at the oven is C or F, my stove is C and just go thru 255. If your oven is F, dont worry I will look for a convertion, I just want to make a right decission.
