I love anything lemon. I love anything easy.
And this recipe combines both of the above so I hope you love them as much as I do.
I am sharing with you one of our family favorite desserts and snacks.
Lemon Bars made with Cake Mix.

Lemon Bars made with Cake Mix

Serves: 24 bars
Ingredients
- 1 box of lemon cake
- ¼ cup of soft butter
- 3 eggs
- 1 Package - 8oz cream cheese
- 1 cup powdered sugar
- 1 tablespoon fresh lemon juice
- 2 teaspoons of grated lemon peel
Instructions
- Mix together the cake mix, one egg and butter, until the mixture is crumbly.Press in bottom of ungreased 13x9 inch pan. It is going to look like the layer is too thin but it will rise while baking.
- In a bowl mix together the cream cheese, powdered sugar, the lemon juice, and one teaspoon of the lemon peel. { If you like the topping to be more lemonish then add more lemon juice to it } You want the mixture to be really creamy. Put aside ½ cup of the mixture in the fridge.
- Add the other two eggs to the remainder of the cream cheese mixture and pour it evenly on top of the cake mixture.
- Bake at 325 F degrees between 20 and 25 minutes.
- After the lemon bars are cool spread the rest of the cream cheese mixture on top of it. I like to sprinkle the other teaspoon of lemon peel on top of the lemon bars.
They are so good!
We cut them with a heart shape cookie cutter to make them more festive and cute.
