Mr. Chef remembered this recipe from years ago and collaborated with his daughter, who lives in South Carolina, on what he could do to further enhance its flavor. She suggested using basil and bay leaves. Since everyone knows how to grill their own steaks, I won’t demonstrate how to make them. I’ll just let you use your imagination on how yummy-to-the-tummy they were.

To begin making your lobster tail, start with a large pot of water. Season it with 4-5 bay leaves, 2 tablespoons of dried basil, and 2 tablespoons of lemon juice. Bring to a boil. It will emit a nice herbal smell throughout the house as the aroma comes off the water.

Take your fine mesh screen, place it over the pot, and arrange the lobster tail on top. Cover with a lid and set your timer for 8 minutes. Don’t peek! The lobster will soak up the aroma coming off the water and give it a flavor that will just be incredible to your taste buds.

After 8 minutes, lift your lid. Your lobster will be a nice Salmon color! How cool is that? It went from a dark, dull gray color to a vibrant pink in just EIGHT minutes! This is where you’ll step back and say “Oh, so pretty!!” And they are!

The best way to get to the lobster meat is to crack and peel the echo skeleton off from the underbelly. It can be a little tricky but be persistent! Peel off the covering and the meat will be exposed for your taking! Melt a mixture of butter with garlic powder to your own taste. Dipping the meat in the butter will be the highlight of your life! So buttery, flavorful and succulent!

Ingredients
  • 4 lobster tails
  • 4-5 bay leaves
  • 2 tablespoons dried basil
  • 2 tablespoons lemon juice
Dipping Sauce
  • ½ cup butter, melted
  • 1 teaspoon granulated garlic, or to taste
Instructions
  1. Fill a large pot ⅔ full of water. Add bay leaves, dried basil, and lemon juice. Bring to a boil.
  2. Place a fine mesh screen across the top of the pot. Place the lobster tail evenly on the screen and cover with a lid. Steam for 8 minutes and don't peek!
  3. Stir together melted butter and garlic for dipping.
Notes
If you don't have a large fine mesh screen, fill a large pot with about 1 inch of water, add the seasonings.
Place a steamer insert inside the pot so that it is just above the water level.
Put the lobster tails on the rack and cover the pot. Steam for 8 minutes and don't peek!
Serve with melted butter.
