One of the greatest pleasures of life is to cook and when the cooking is easy
the pleasure is double. I am sharing with you the classic No-Bake Cookie
with a twist: The No-Bake Coconut Cookie.
No-Bake Cookies are among our family favorites.
I love that the oven doesn’t need to be turned on, which in the summer this is a BIG plus.
RECIPE
Here we go…
2 Cups Sugar
1/4 Cup Butter
1/2 Cup Milk
1/4 Cup Cocoa.
1 Cup Shredded Coconut.
1 Tablespoon Vanilla
2/3 Cup Peanut Butter
2 1/2 Cups Quick Oats.
DIRECTIONS
Slowly bring to a boil the sugar, butter, milk and cocoa.
Stir often so the mixture does not stick to the bottom of your pan.
Turn the heat down and add the vanilla, peanut butter, quick oats and coconut.
Stir 1 minute longer and turn off the stove.
Drop by spoonful onto wax paper or aluminum foil adding some additional coconut to the top.
Let them dry and eat them.
My kids love them with some cold milk…
ANOTHER OPTION!
You don’t like coconut?
No problem!
Use the same steps above without adding the coconut and using 3 Cups of Quick Oats instead of 2 1/2.
They are really good this way too!
So there you have them… Easy, quick and delicious
No-Bake Coconut Cookies.
Enjoy!

Of course…add coconut. My daughter would love this. Great idea! Love to have you link this up to Titus 2 Tuesday on Cornerstone Confessions. Hopping over from Beyond the Picket Fence.

Oooh yum! These look so simple but so delicious! I’ll definitely have to try my hand at these!
Yum! Anything to not turn on the oven…on these hot days. I like to option of quick oats too.
We made them yesterday late afternoon and by the time we went to bed there was no more left. 😉
