How to Make Crepes
  • 4 eggs (unbeaten)
  • 2 ¼ c flour
  • ½ tsp. salt
  • 2 c milk
  • 2½ tbs. sugar
  • 1 tbs. vanilla
  • ½ tsp lemon zest
  • Butter to coat pan
  • Optional : powdered sugar
  1. Put all ingredients into a bowl and mix using hand mixer until all the ingredients are evenly incorporated.
  2. Heat a small to medium non-stick pan and add a small amount of butter to coat.
  3. Pour a small amount of batter into the center of the pan and swirl to spread evenly and thinly.
  4. Cook for 30 seconds and flip. Cook for another 10 to 15 seconds and remove from heat onto a plate.
  5. Repeat these steps until all the batter is gone.
  6. Fill them with your favorite toppings.
The batter can be made the day before and keep it in the fridge until you are ready to make the crepes. Leftover crepes can be stored in sealable plastic bags in the refrigerator for several days!
