Creamy Risotto Recipe
  • 1 package Jennie-O Sweet Italian Turkey Sausage (19.5 oz.)
  • 1 small red onion, diced
  • 1 Tbsp. olive oil
  • 1 c. arborio rice
  • 4 c. (32 oz.) chicken broth
  • 1 bunch fresh asparagus, ends removed and cut into 1½ inch segments
  • ½ c. sun dried tomatoes, chopped
  1. Heat 1 Tbsp. olive oil in a large stock pot. Stir in turkey sausage and onion; cook over medium heat until sausage is opaque.
  2. Add rice and stir constantly for one minute.
  3. Add 2 c. chicken broth and cook, stirring, until liquid is incorporated and no more liquid remains in pot.
  4. Continue adding chicken broth, ½ c. at a time, stirring after each addition until no liquid remains.
  5. Once all liquid has been incorporated, remove risotto from heat. Add fresh asparagus and sun dried tomatoes and stir to combine.
  6. Serve hot with bread, salad, or on its own.
