Hi friends! How are you? With as busy as this season can be I love coming up with super simple recipes to cut my time in the kitchen. I mean we have to eat, but that doesn’t mean that it has to take a bunch of time. That being said, quick recipes don’t have to skimp on quality or flavor either. Which is why I’m so in love with recipes like these skillet biscuits. With just 3 simple ingredients I always have on hand these biscuits whip together in less than 30 minutes. They are so simple that I often delegate the task of making them to the kids. They are always super impressed with themselves because we all rave about how good they are as we enjoy whatever we are pairing them with. Check them out!

You’ll need butter, buttermilk & self-rising flour for these biscuits. Now, if you don’t have buttermilk, you can add 1 tbsp of vinegar to your measuring cup & then fill with milk to the 1 cup mark. Then just let it sit for about 5 minutes. The milk will look a little frothy, which means it’s ready. This ratio is perfect for creating your own buttermilk. I also keep powdered buttermilk on hand because I never know when I’ll need some for recipes like this.

We actually make this recipe a lot because we can do it on short notice. It only takes about 25 minutes or so, which is great for those times when I forgot to make my one-hour dinner rolls that we usually pair with a lot of our meals. These are super quick & are oh so DELICIOUS!

Ingredients
  • 2-1/4 cups self-rising flour
  • 1 stick (1/2 cup) cold butter- cubed
  • 1 cup buttermilk
Instructions
  1. Preheat oven to 450 degrees.
  2. In a large bowl, combine ingredients & stir with a rubber spatula until flour is incorporated (10-15 seconds)
  3. Use a cookie scoop to portion out rounded portions into a greased/seasoned cast iron skillet
  4. Bake 16-18 minutes
  5. Brush with butter after removing from oven
