You see- I grew up on the beach. Not so much a tropical beach but a beach none the less. So since I now live in North Idaho I like to bring the flavors I associate with home into my everyday life as much as possible. Many times that means some type of beachy vibe in my food & drink. This pretty little beverage did not disappoint AND it’s non-alcoholic, so everyone can enjoy.

Pineapple Sparkler

I love how easy it is to whip this up. I almost always keep a fresh pineapple on hand. So when I’m cutting one up to have with lunch – I just take a little & pop it in the blender with the other ingredients & there you go. Tropical drink in about 90 seconds – start to finish.

Pineapple Sparkler
Ingredients
  • 2 cups fresh pineapple- cut into chunks
  • ¼ cup lime juice
  • ¼ cup cream of coconut
  • 12 ounces coconut sparkling water
  • 1-1/2 cups ice
Instructions
  1. Place all ingredients in blender & blend on high for about 45-60 seconds- making sure all the ice is crushed before pouring into your serving glasses.
  2. Garnish with pineapple, lime or mint.
