Hey, 36th Avenue friends! It’s Cathy from Lemon Tree Dwelling, and I’m back today to share another delicious recipe with you! This side dish or appetizer recipe is perfect for a summer lunch or dinner, it can be served either hot or cold, and it comes together in no time at all. Best of all, it’s caprese (one of my favorite flavor combinations)!!
Caprese flavors are delicious all year round, but especially near the end of summer, when gardens are bursting with fresh vegetables. Sadly, we never got around to planting a vegetable garden this year…..so no fresh tomatoes or basil for this girl! But that didn’t stop me from loving my caprese!
My favorite part of it? The BASIL!! What about you? Are you a caprese fan? I hope so….because you’ll LOVE this delicious dish! And….if you’re lucky enough to have your own garden….you’ll already have a few of the ingredients taken care of!
- 2 packages (1 lb. each) gnocchi
- 1 pint grape tomatoes, halved
- 8 oz. fresh mozzarella pearls
- 4 oz. prosciutto
- ¾ c. pesto
- ¼ c. pine nuts
- Prepare gnocchi according to package instructions. Drain.
- Combine cooked gnocchi with tomatoes, fresh mozzarella, prosciutto, pesto and pine nuts.
- Serve hot, cold, or at room temperature.
