Ingredients
  • 1 egg
  • 2 egg whites
  • ½ cup thinly sliced fresh baby spinach
  • 2 tablespoons chopped red bell pepper
  • 2 tablespoons chopped tomatoes
  • 2 tablespoons chopped deli style ham
  • salt to taste
Instructions
  1. Wash and chop vegetables.
  2. In a small size bowl beat eggs together until well blended. Add chopped vegetables and mix well.
  3. In a medium-size skillet over medium-high heat, pour eggs into pan and cook until edges are golden brown, approximately 2-3 minutes
  4. Flip omelet over and cook for an additional 2-3 minutes.
