CHICKEN CHICKPEA SALAD

Fresh, healthy and satisfying lunch with lots of goodness!
Ingredients
  • 2 halves chicken breast
  • chicken seasoning
  • 2 tbs olive oil
  • 2 cups romaine lettuce
  • ½ cup cherry tomatoes
  • 1 can garbanzo beans -drained
  • ½ red onion - sliced
  • ¼ cup chopped celery
  • 1 avocado
  • Dressing:
  • ¼ cup olive oil
  • ¼ cup balsamic vinaigrette
  • salt and pepper to taste
  • 2 garlic cloves - crashed
  • 2 tsp lemon juice
Instructions
  1. To prepare dressing:
  2. Add olive oil, vinaigrette,seasoning, garlic and lemon in a bowl and stir together.
  3. Heat olive oil and add seasoned chicken to pan, grill it for 3-5 minutes on each side r until golden brown.
  4. While chicken is cooking, place salad, tomatoes, onions, celery, beans and feta in big bowl.
  5. Serve salad with dressing topped with grilled chicken stripes.
