1 jar (13.75 ounces) marinated artichoke hearts packed in water, drained and chopped
10 ounces chopped frozen spinach, thawed and patted dry
½ cup thinly sliced and chopped onion
1 clove garlic, minced or pressed
½ cup Greek yogurt
½ cup real mayonnaise
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
Instructions
Preheat oven to 375 degrees Fahrenheit. Prepare a 9 x 13-inch baking dish with cooking spray.
Line dish with chicken breast, salt and pepper to taste and bake, uncovered, for 15 minutes.
Meanwhile, combine remaining ingredients in a medium sized bowl and pour over top of chicken. Continue baking for 20-30 mins more or until a meat thermometer registers 170 degrees Fahrenheit.
Let stand for about 5 minutes and serve.
