Hello there my The 36th Avenue friends! It’s Gina from Kleinworth & Co. and I’m back today to share with you all my favorite spring dessert. As the weather starts getting really nice I really crave berry flavored desserts. But I also start craving time outside & I don’t want to spend any more time in the kitchen than I have to. So when the windows open I pull out my no-bake treats. This blueberry ice cream is made with just 3-ingredients & actually isn’t ice cream at all. It’s dairy free!!! Which means that this is super low-cal & yet still just as delicious as ever.
This particular recipe makes just a little more than what I would consider “personal size”. So I’m always quadrupling the recipe to make sure the kids can have some too. Fortunately I keep all these ingredients on hand most of the time so whipping this together is so easy.
I love to make a super batch of this in the morning after the kids are done with breakfast. Then I just pop it in the freezer & it’s ready by the time we want dessert that evening. I feel good knowing it’s made with ingredients so good that I would serve them for breakfast. But we can enjoy it as a creamy, cool & refreshing dessert after a warm sunny day. Ahhhhhh- how nice is that?!
- 1 frozen banana
- ⅓ cup frozen blueberries
- ¼ cup honey
- Combine all ingredients in a high powered blender or food processor & blend on high for several minutes or until thick & creamy
- Serve immediately if you love a soft serve consistency or transfer to an airtight container & freeze several hours before serving
