Hello , It’s Aniko from Place Of My Taste. How is everyone’s summer going? Today I am sharing a great and super easy mozzarella & tomato appetizer recipe that you can put together in minutes, grab and go to your next cookout party. I love summer and it’s hard to believe that it’s almost over. Summer is for fun, plenty of eating outside, enjoying great breeze nights with friends out on a patio.
Baby tomatoes are my favorite and they never last too long in my refrigerator. I love how sweet and crunchy they are and I wish we could grow them on the backyard. Mozzarella cheese is one of the kind of cheese that I always have at home. I use it for sandwiches, for appetizers and cooking. When a spontaneous cookout party comes up at my friends house I can easily put together this easy appetizer in no time. It’s best of chilled for at least 30 minutes.
- 1 tube Mozzarella Cheese
- 1 cup Ripe baby Tomatoes
- Handful of fresh basil, chopped
- ¼ cup Extra Virgin Olive Oil
- ¼ cup Balsamic Vinegar
- (toothpick to garnish)
- Slice the Mozzarella
- Layer the Mozzarella on a platter and add baby tomatoes on top
- Stir together Olive oil and vinegar
- Drizzle the dressing over the Tomato and Mozzarella
- Sprinkle with fresh, chopped basil
- Chill it before serving.
This easy appetizer is great for any occasions and serves young and old. Pair it with fresh bread and a glass of wine.
