You heard me right!
This is the best banana bread ever!
The first time I had it was right after I had my sweet Anni almost 10 years ago.
A neighbor brought it over as part of a picnic basket for our family and it has been a favorite bread since then.
Everything inside of the basket was delicious but the banana bread was supreme!
The best part about this recipe is that it is simple to follow.
Everyone should give it a try.
Trust me!
Ingredients
4 large bananas { mashed }
1 Cup Butter
2 Eggs
2 Cups of Sugar.
4 Cups of Flour.
1/2 tsp. Salt
1/2 Cup Water.
2 tsp. baking soda.

The first thing you need to do is to peel and mash those ripe bananas.
They don’t look pretty outside but they are sweet and perfect inside.
The reason why you mash them first is because the natural juice of the banana will come out while you get the batter for your bread ready.
This juice will make your bread moist and sweet.
My kids love doing this part…

Cream the butter, sugar and eggs.
TIP: Make sure the butter is room temperature. You want it soft.
If you just took it out of the oven put it in the microwave for about 10 seconds or until soft.
Don’t let it melt you just want it soft.

Add flour and salt to the creamed mixture.
Mix Well!
After you add these two ingredients the mix will turn into soft crumbs.

Dissolve soda in warm water and add to mixture.

Blend in the mashed bananas.
TIP: At this point you can add walnuts if you like.
Bake in a well greased pan at 325º for 1 hour.
This recipe will make two loafs of bread or 1 regular loaf and four small ones.
GLAZE
This is what makes this bread EXTRAORDINARY!
About five minutes before the bread is done add in a small sauce pan
1 and 1/4 Cup Brown Sugar
1/4 Cup Orange Juice
and 1/2 tsp. of almond extract.
With slow heat melt these three ingredients together and stir for a few minutes.
You want the mix to thicken just a little bit.
After your bread is baked and out of the pan add the mix on top of them.
When the glaze cools down it will become harder and almost crystalized.

TIP: If you don’t have orange juice or almond extract, mix brown sugar, water and vanilla.

Okay. The muffins turned out cake-like…very “heavy”. I guess it wasn’t meant to be cut in half. The glaze was awesome!!! I will definitely try this again using the whole recipe. Thanks for sharing!

I am going to try it now as I have so many bananas in the freezer. A friend gave me the tip to freeze old bananas. They need to be taken out a couple of hours before making the cake and I just cut the tip off and squeeze out the banana flesh which is really moist.
